I used this recipe from All Recipes and just made one small adjustment: less white sugar!
What You'll Need
3 cups of flour
1 tsp of baking soda
1 tsp of baking powder
1 tsp of salt
3 tsp of cinnamon
1 3/4 white sugar (compared to the 2 1/4 the original recipe suggests)
1 cup of vegetable oil
3 tsp of vanilla
2 cups of grated zucchini (do not drain)
1 cup of chopped walnuts (optional)
2. Sift flour, salt, cinnamon, baking soda and baking power.
3. Beat together eggs, oil, vanilla, and sugar until creamy, then stir in the sifted mix, and lastly, fold in the grated zucchini and walnuts
4. Pour into pans and bake for 40 - 60 minutes! (mine only took 45)
